This is a great salad to eat on it’s own as a light lunch, added to a buffet or served with chicken as dinner.
4 cups Baby Spinach
8 Strawberries (sliced)
4 ounces Goat Cheese (crumbled)
1 Ripe avocado (diced)
⅓ cup Walnuts (roasted)
Balsamic reduction
Combine all salad ingredients in a large bowl or platter and gently toss.
Top with balsamic glaze. You can also add some grilled chicken and you’ve got a perfect summer meal.
